Chilli with Avocado & Tortilla Chips – Fit Recipe

I love food that you can nibble away at and enjoy with friends. Chilli, avocado, cheese and tortilla chips - what's not to love?! This one’s great to kick back on the couch with and watch a good movie.

Don't be alarmed by the relatively high fat content. This comes mainly from the avocado which is a rich source of essential polyunsaturates. You could offset this by choosing low-fat yoghurt and cheese options, but personally I wouldn't bother.

Serves 4*

*Macros are provided based on the recipe serving 4 as a main meal. Alternatively, you could divide among 6 people for a lunch or 'snack' option. In this case you'd just multiply the macros by 0.67 (or enter your portion as 0.67 into MyFitnessPal) to give more representative values.

Chilli with Avocado & Tortilla Chips

2 medium onions

2  400g cans kidney beans, rinsed and drained

1 400g can black beans, rinsed & drained

1 tbsp olive oil

2 tsp Mexican spice mix

1 400g can chopped tomatoes

2 avocados

1/2 cup natural yoghurt

1/4 cup (25g) grated cheese

Zest & juice of 1 lime

100g tortilla chips

Method

  • Slice the onions into rings
  • Heat the oil in a frying pan and fry the onions with the spices for around 3 minutes to soften
  • Add the chopped tomatoes and bring to the boil
  • Cook for 5 minutes on medium heat until slightly thickened
  • Add the beans, season with salt & pepper and simmer for another 3 to 4 minutes
  • Meanwhile, cut the avocados and remove the flesh. Cut into chunks and spritz with a little lime juice. Add the remaining lime juice and zest to the yoghurt
  • Ladle the chilli beans mixture into bowls and dollop a tablespoon of the yoghurt on top of each
  • Divide the avocado and cheese among the bowls and serve with the tortilla chips

Variations

If you don't have 'Mexican' spice mix you could just use a teaspoon each of ground coriander and cumin instead.

I like to buy ready-grated 'Pizza Blend' cheese which is a mixture of cheddar, mozzarella and a little Parmesan. You could use any cheese of your choice. If you wanted to be extra healthy and up the protein ratio, opt for cottage cheese.

I like this as it is with the texture and flavour of the beans. You could also include minced beef or shredded chicken to the bean mixture if you wanted to add meat. If the meat hasn't been cooked already, fry it before adding the onions.
